Cranberries are eaten a lot during the winter period, and I thought these gluten-free cranberry cookies were very suitable for this period! This way your dog can also enjoy them. And let’s face it: baking for your dog is always fun, right?
Ingredients:
- 250g buckwheat flour
- 2 eggs
- 125ml apple sauce (preferably organic and 100% apple, without added sugars)
- 2 tablespoons coconut oil (melted)
- A handful of dried cranberries (unsweetened!)
Instructions:
- Preheat the oven: Preheat the oven to 180°C and line a baking tray with baking paper.
- Chopping Cranberries: Cut the dried cranberries into smaller pieces.
- Dry Ingredients: In a large bowl, combine the buckwheat flour and chopped cranberries.
- Wet Mixture: In another bowl, beat the egg, add the applesauce and melted coconut oil. Mix well.
- Combine: Add the wet mixture to the dry mixture and stir to form a stiff dough.
- Roll out dough: Roll out the dough on a surface dusted with buckwheat flour to about 1/2 inch thickness.
- Cutting out shapes: Use a cookie cutter of your choice
- Baking: Place the cookies on the baking tray and bake for 20-25 minutes, until golden brown.
- Cooling: Let the cookies cool completely before giving them to your dog.
Decoration:
For decoration, you can press a fresh cranberry into the dough before baking. The cookies may become quite ‘Christmassy’, but there is also something cute about it, haha!
